That is EVERYWHERE, not just in Cruces. And yeah, it’s appalling.
The generations behind ours will quite happily eat in nothing but chain restaurants — or as I call them, “troughs.”
Fortunately, right down the street, there’s still Spanish Kitchen. For the old folks.
